Job Description
ATLA, an Enrique Olvera project moving to the west coast is currently seeking a savvy experienced Kitchen Manager to join their opening team.
Tasks and Responsibilities:
  • Ensures that the kitchen manager team and staff avoid cross contamination, improper food handling and/or storage practices, etc., through proper training and supervision.
  • Manages assigned staff, including scheduling, performance feedback, discipline, investigations and terminations, responsible for ongoing training and professional development of staff members.
  • Assists in maintaining current kitchen schedules, staffing templates, staff files, ordering and production targets, etc.
  • Maintains food quality standards for the restaurant. Oversees all phases of food procurement, production and service, including, inventory and ordering, storage and rotation, food preparation, recipe adherence, plate presentation, and service and production time standards.
  • Assists in implementation and maintains all kitchen systems
  • Monitors all Commitment to Service/Mystery Guest scores, corporate support staff visitation notes, etc. Follow up with a corrective action plan.
  • Responsible for feeding craftable foodager systems with recipes, vendors in order to control cost.
  • Responsible for achieving or exceeding the written restaurant budgets for ATLA (i.e., food cost, food efficiencies, labor cost and direct kitchen expenses).
  • Staff administration, selection, induction to the position and onboarding for new income of 30 days with weekly evaluation according to the SOP.
  • Evaluates the quality, care and morale of the staff and strives to improve these areas through solid communication, care with schedule-writing, work group leadership.
  • Ensures the cleanliness of the kitchen by maintaining to specific standards, passing Health Department audits with a 90% (A) or better, and training staff on proper sanitation guidelines.
  • Responsible for managing on-going repairs, maintenance.
  • Sets operational goals and follow-up plans for the work unit. Directs and holds all work unit staff accountable for those goals.
  • Avoid 86 due to lack of planning.
  • Ensures proper staffing levels by recruiting, interviewing and hiring talented kitchen staff members following ATLA guidelines.

Position Requirements
  • At least 2 years in food preparation experience in a fine dining high volume restaurant
  • Ability to work a variable schedule, including weekends, and shifts from morning through late night.
  • Degree from a culinary arts training program preferred.
  • Food Handler’s certificate is preferred
Compensation: $75,000 (annual salary)
