Job Description

Job Title: Pastry Sous Chef
Reports to: Pastry Chef/MML Executive Team
Employment Status: Full-Time, Exempt-Salary

Advanced interpersonal skills to help navigate complex working relationships and a strategic mindset that allows to plan and develop talent management, training, and safety.
Essential Functions and Duties:
The Pastry Sous Chef is responsible for the production and presentation of pastries and other baked goods. Assists the Pastry Chef in the daily activities of the kitchen, including menu development, inventory and purchasing of supplies, and cost control.
What we are looking for:
  • Creating strong communication and teamwork with management, hourly staff, and the MML Team via SOPs, Avero notes, emails, and verbal communication.
  • Food Cost control in partnership with Pastry Chef and Executive Chef
  • Overall building & equipment maintenance
  • Maintenance of restaurant to MML & County Health Dept. Standards
  • Other job duties as assigned.
  • Monthly inventory and analysis – finished by the 3rd of each entering month – including sysco, segovia, gaucho, abco, etc.
  • Working service side-by-side as needed to support your team as well as constant mentorship and training.
  • Overseeing the overall pastry department's quality from procurement, and production to execution daily to ensure successful, delicious, consistent, and profitable services.
  • Create and sustain strong and meaningful professional relationships with MML Partners
  • Responsible for pastry department scheduling, hiring, training, retention, mentorship, and development
  • Hourly Labor Cost Control in partnership with Pastry Chef and Executive Chef
