Job Description

Culinary Services Division (CSD), a division of Auxiliary Services, provides meals and specialty beverages for over 18,000 customers daily and is an integral part of campus life and the overall college experience. CSD proudly provides Montana State University students with not only a repertoire of various cuisines, cooking styles, and flavors, but a comfortable atmosphere to meet friends, study, and simply relax. The division is comprised of 2 residential dining halls, a commissary kitchen, 3 coffee shops and the Union Market retail operation, Brick Breeden Fieldhouse and Bobcat Stadium Concessions, Fork in the Road food truck, MSU Catering, Indulge In-House Bakery, and the Farm to Campus Program.

Reporting to the Chef de Cuisine, the Executive Sous Chef will be assigned to work in our contemporary dining halls. Combined, the dining halls serve over 10,000 meals per day and are open 7 days a week from 7am – 7:30pm providing breakfast, lunch, and dinner. Specialty dinners are served multiple times a month highlighting Montana Made, holidays, and other special events, and student/parent recipes.

Shift is: 4 days – 10 hours/shift: Friday (10am – 8:30pm), Saturday and Sunday (6am – 4:30pm), and Monday (10am – 8:30pm).

Duties include:

  • And contribute to the success of the department by performing other duties as needed in support of the department’s mission.
  • Perform a variety of administrative tasks for inventory, ordering, and payroll.
  • Provide active supervision of culinary production and staff( full-time, student, and other temporary employees).
  • Perform daily quality inspections of production; ensures proper equipment operation/maintenance; and ensures staff are compliant with safety and sanitation guidelines.
  • Interact with and builds sustainable working relationships with students, campus constituents, vendors, and other industry partners.
  • Assist with training of culinary staff.
  • Regularly assist dining hall operations in day to day activities as needed.
  • Ensure food production meets/exceeds all state and local food code standards as well as Hazard Analysis Critical Control Points (HACCP) standards.
