- Responsible for fiscal records for budgetary purposes.
- Interviews, hires, evaluates and terminates all civilian and inmate food service employees.
- Meets with health, fire & OSHA inspections.
- Responsible for ensuring that all required maintenance/repair work is performed on cafeteria equipment.
- Supervises all personnel in the performance of their daily duties.
- Must be certified as hazard analysis & critical control point (HACCP)and/or SERV safe manager or must attain certification within 1 year of employment.
- Works with inmate representative committee to resolve problems and complaints. Responsible for the accurate preparation of all food orders on weekly basis and accurate deliveries.
- Trains and instructs all employees, i.e., cooks, bakers, kitchen and dining help in all phases of their duties.
- Prepares cook's work sheet in strict accordance with SCDC master menu and maintains records for a 5-year period;
- Acts as officer in maintaining internal security of cafeteria.

State of South Carolina Minimum Requirements:
A high school diploma and supervisory experience in quantity and quality cooking. (Or an acceptable equivalency as approved by the Division of State Human Resources).
SCDC Minimum Requirements:
- Must successfully complete basic supervisory course within eighteen (18) months of employment.
- Three (3) years’ experience in a correctional environment preferred.
- Must be certified by South Carolina department of corrections training academy or must successfully complete SCDC basic training upon hire.
- Must be certified in hazard analysis & critical control point (HACCP) or SERV safe manager or attain within six (6) months of employment.
- High school diploma and five (5) years’ experience in quantity and quality cooking and one (1) year of supervisory experience.
