Description of Work:

  • Provide oversight and direct supervision to a catering contract within the facility
  • Schedule use of personnel, evaluate individual performance, recommend disciplining of employee (cook II, cook supervisor I) and conduct foodservice staff meetings and training at facility
  • Maintain a safe facility for performance of work, maintain Food Safety Certification, maintains integrity and accountability of the facility Child Nutrition Program through compliance with all federal and state regulations and Department School Nutrition policies
  • Record of Daily Meal Participation) and inventories in compliance with federal and state regulations are maintained
  • Provide direct supervision to kitchen staff on a daily basis
  • Properly uses and cares for all equipment
  • Performs all duties and responsibilities in an ethical and professional manner Communicate positively with facility staff, students, as well as food service staff
  • Maintains high standards of control for quality food production and service
  • Ensures that required records (production records, HACCP binders) reports (SFS-4 School

  • Maintains an environment conducive to protecting the health and well-being of the facility's juveniles through high levels of food safety and sanitation standards
  • Follow Federal and State safety and sanitation procedures
  • Provide nutritionally adequate meals meeting Federal Child Nutrition Program meal patterns and dietary standards, while adhering to planned menus
  • Follows operational procedures for efficient and effective food production and service
  • Provide on-the-job training in equipment use and care, quality food production and state sanitation regulations
  • Requisition food and supplies as needed, check the cost and quality of items received, and ensures proper storage
This is a full-time position (40 hours per week) with State Benefits.

The salary grade for this position is NC08. State employees are encouraged to apply for positions of interest even if the salary grade is the same as, or lower than, their current position. If selected for this position, a new salary will be recalculated taking into consideration the quantity of relevant education and experience, funding availability, and internal equity. Based upon these factors, a pay increase MAY result.

To qualify for this position, applicants must document on the application that they possess

  • Ability to interpret and follow standardized recipes, while adhering to planned menus as well as specific oral and written instructions.
  • Thorough knowledge of the principles of personal and food sanitation and methods of maintaining food safety standards in an institutional kitchen.
  • General knowledge of federal and state laws and policies relating to the Federal School Nutrition Program.
  • Ability to plan effective work methods in food production and manage other foodservice staff and unskilled workers.
  • Thorough knowledge of the methods, materials, and equipment used in large-scale cooking and food service activities.
  • Thorough knowledge of the cooking times and temperatures of various foods and methods of preserving their flavor, food value and safety.

Minimum Education and Experience Requirements

Minimum Education and Experience:

Bachelor's degree dietetics, food management, culinary arts, hospitality management from an appropriately accredited institution
OR
High school or General Educational Development (GED) diploma and four years of supervisory experience in the preparation and serving of food in quantity lots
OR
an equivalent combination of education and experience.
