Job Summary
Working as the Traveling Chef Manager in the Midwest, you will be responsible for back and front of the house operations for the food service departments of approximately 13 healthcare (hospital) accounts in Illinois and Wisconsin. You will maintain a quality culinary program and process all financial reporting. Duties also include menu development, inventory, purchasing, labor and food cost controls, maintaining sanitation standards, and personnel management to include hiring, coaching, counseling, training and developing.

As a traveling role, this is a 10 days on, 4 days off work schedule. This is a great opportunity for an Executive Chef who's bored working in the same kitchen every day and wants to travel and do different jobs (both FOH and BOH) at different clients.

***Note that this is a remote job - you can live anywhere in the region, from St. Louis to Milwaukee!

• Key Responsibilities:

• Carries out supervisory responsibilities in accordance with the organization’s policies and applicable laws
• Maintains food cost while ensuring quality standards
• Maintains an active role in managing team developments
• Participates in employee meetings and training programs
• Manages purchasing and inventory controls
• Conducts safety, sanitation and maintenance programs
• Performs related duties and special projects as assigned**

Preferred Qualifications:

• Knowledge of safe and sanitary food handling principles
• Conformity to the highest standards of personal integrity and ethical behavior
• Ability to lift, bend and carry up to 40 lbs
• ServSafe or Department of Health certification a plus
• Computer skills: proficient in Microsoft Office and POS
• Must possess a passion for excellence
• Knowledge of budgets, labor costs, inventory controls
• Self-starter, innovative and ability to multitask
• Maintains a positive attitude under pressure and motivate team
• Strong leadership, coaching and training skills
• Excellent verbal and written communication skills
• P&L and financial reporting experience
• Exceptional business etiquette and client relations
• Purchasing, food storage and sanitation experience
• Degree in Culinary Arts is preferred or equivalent professional experience
• Must be knowledgeable on HACCP controls along with proper storage and use of food
• Five years progressive culinary management experience
