The Culinary Room Chef is responsible for a specific dining room kitchen and ensures that the kitchen provides nutritious, safe, eye-appealing, properly flavored food while maintaining a safe and sanitary work environment for all employees. Other duties include menu planning and costing, preparation of budgets, maintenance of payroll, food cost, and other records. Specific duties involving food preparation and establishment of quality standards, training of employees in cooking methods, presentation techniques, portion control and retention of nutrients. All duties are to be performed within the guidelines of the Seneca Gaming Corporation’s policies and procedures, Internal Control Standards and objectives.

Position Requirements

Qualifications/Requirements:

Education/Experience:

• ServSafe certification required.
• Previous customer service preferred.
• Must be 18 years of age or older upon employment.
• A minimum of four (4) years in a food preparation position.
• Degree or certificate from a postsecondary culinary arts training program or equivalent to five (5) years’ experience

• Advanced culinary skills, including food preparation, flavor profiles and the ability to develop unique recipes
• Ensures effective recruitment, hiring, training, coaching and counseling and other personal related matters are being handled
• Computer knowledge a plus
• Continuous education with culinary market trends

Language Skills and Reasoning Ability:

• Must have the ability to deal effectively and interact well with the customers and employees.
• Effectively able to manage staff during high volume situations
• Must possess excellent communication skills, including the ability to read, write and speak effectively to employees as well as customers.

• Must have the ability to work independently and with minimal supervision
• Must have the ability to resolve problems/conflicts in a diplomatic and tactful manner.

Physical Requirements and Work Environment:

• Maintain physical stamina and proper mental attitude to work under pressure in a fast paced, casino environment and effectively deal with customers, management, employees, and members of the business community in all situations.
• Work involves moderate exposure to unusual elements such as extreme temperatures dirt, dust, fumes, smoke and /or loud noises. Physical activity is required along with the handling of objects up to fifty (50) pounds
