About Westgate Smoky Mountain Resort & Spa:

As a member of the Westgate Smoky Mountain Resort team, you will meet and engage with guests who have arrived to enjoy all the Great Smoky Mountains have to offer and help them experience our world-class amenities such as the state-of-the-art Wild Bear Falls water park.
To ensure objectives are met in the Restaurant. Responsible for complete restaurant organization. Directs and coordinates all activities regarding the restaurant by performing the following duties personally or through subordinate supervisors.
ESSENTIAL DUTIES AND RESPONSIBILITIES include the following. Other duties may be assigned.
- Train supervisory staff to follow up and maintain standards.
- Responds to guest inquiries, complaints in a professional and urgent manner.
- Develop and implement outlets on-going staff training programs.
- Participate in company monthly Goals & Measurements Program.
- Performs POS System voids, management functions and programming within department procedures.
- Maintains each outlets par stock per department procedure.
- Audits Guests checks, documenting irregularities, cash control violations.
- Control "front of house" operating expenses in accordance with weekly sales per budget
- Documents staff call-in/tardiness.
- Authorize discounted/complimentary Guest Relation checks within department guidelines.
- Researches/tracks missing check reports.
- Administers liquor/beverage requisitions per department procedure.
- Observes staff opening/running/closing outlet procedures, maintains current documents checklist.
- Discipline individual staff in accordance to company guidelines.
- Organize regularly scheduled training classes and meetings with the entire staff of each area.
- Maintains current and accurate standard operating procedural manuals to include service standards, cash handling procedures, menu item preparation, specifications, safety and security, purchasing, ordering, receiving, stocking, requisitioning and internal audit policies.
- Operate outlets within budgeted guidelines.
- Provide detailed training to all staff specific to compliance responsibilities to State Health Regulations.
- Conduct formal performance evaluations of all Restaurant staff.
- Ensures adherence to beverage controls per company and department policies.
- Responsible for New Hire staff selection, interviewing, orientation and department training. All to be conducted within company/department guidelines.
- Prepare weekly revenue forecasts and staff work schedules within established "staffing guidelines".
- Responsible for staff training programs and sales incentive programs which support increasing sales, achievement of budgeted check averages and increase profits.
- Enforces staff, company and department grooming policies.
- Ensures adherence to all defined department/company standard operating procedures within department.
- Prepare and adjust work schedules for the entire staff to ensure presence of requisite labor force on each shift with objective to meet customer service standards budgeted guidelines.
- Maintains accurate outlet analytical information throughout the year to support budget planning.
- Responsible for providing excellent service to owners and guests alike.
- Enforces proper buffet/special event F&B check/cash controls.
- Recognizes/praises staff extraordinary service, rewards staff utilizing "David Dollars" and other employee programs.
SUPERVISORY RESPONSIBILITIES
Is responsible for the overall direction, coordination and evaluation of both units. Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws. Responsibilities include interviewing, hiring, and training employees; planning, assigning and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.

EDUCATION and/or EXPERIENCE
- Must have full service dining experience
- Fifth year college or university program certificate; or two to four years related experience and/or training; or equivalent combination of education and experience.
- Must have training skills and previous training experience
LANGUAGE SKILLS
Ability to read, analyze and interpret common scientific and technical journals, financial reports, legal documents, general business periodicals, professional journals, technical procedures or governmental regulations. Ability to write reports business correspondence, and procedure manuals. Ability to effectively present information and respond to questions from groups of managers, clients, customers and the general public. Ability to respond to common inquiries or complaints from customers, regulatory agencies or members of the business community. Must have excellent communications skills
CERTIFICATES, LICENSES, REGISTRATIONS
Food Handlers Certification required within 30 days of Hire, must be maintained on a current/valid status. Must successfully attend Company Mandatory Manager Training programs.
