JOB SUMMARY: Prepare Pizzas to Specifications while Maintaining Portion Control and executing proper sanitation practices.

Responsibilities:

• Take care in preparation and plating to ensure all items are portioned correctly and plated to standard.
• Utilize first in, first out standard for rotation and use of perishable food products, including prepared items in the pantry.
• Proper safe and sanitary use of knives and other kitchen equipment.
• Other duties as assigned.
• Set up and breakdown assigned areas according to kitchen standards and ServeSafe HACCP food sanitation guidelines.
• Maintain professional conduct in all communications with internal and external guests.
• Adhere to ServSafe HACCP food sanitation standards throughout all phases of food production.
• Develop proficiency on assigned station and expand knowledge by training in other areas of the unit.
• Do prep work as assigned while maintaining a clean and orderly station with a consistent end product.
• Practice teamwork and open communication with other cooks in the pizza pub or in assigned area.
• Pull proper amounts of dough to thaw daily.
• Prepare and cook pizza utilizing fresh dough in addition to other food items such as salads, appetizers and desserts according to spec sheets
• Maintain temperature logs and product inspection on a daily basis. Notify your leadership team of any spoiled product Kitchen Management of any items found to be in the temperature danger zone or unsatisfactory serving quality.
• Adhere to all sanitation, safety and risk management policies, and required personal protective equipment throughout your shift.

Qualifications:

• Physical ability to stand for long periods of time and work in high temperatures.
• Basic knowledge of ServeSafe HACCP food sanitation program with ability to apply necessary portions of program.
• Basic knowledge of kitchen production, commercial grade equipment such as slicers, steamers, mixers, kettles, pizza ovens and propane operated units.
• Ability to follow recipes both orally and written
• Must be available for evening shifts, weekends, and holidays.
• Safe and proficient knife handling skills.
• Previous kitchen experience with some cooking on a line station or batch cooking. Experience in a Pizzeria is a plus.
• Physical ability to lift a 15.5 gallon Keg of beer six inches off the floor and into the keg cooler.
