Food Service Specialist V (011349) Lieber Correctional Inst., Ridgeville (Dorchester) Level 3

Job Responsibilities

• Responsible for the accurate preparation of all food orders and deliveries.
• Responsible for fiscal records for budget purposes.
• Manages and directs the operation of the food service program with a population of 1300 inmates.
• Acts as correctional officer in maintaining internal security in the cafeteria.
• Responsible for ensuring required maintenance is done, work orders are entered as necessary.
• Supervises all food service personnel in the performance of their daily duties.
• Responsible for the discipline of inmate workers; maintains security of all cafeteria equipment, acts as correctional officer when performing shakedowns, escorting inmates, etc.
• Interviews, hires, evaluates, and terminates all civilian and inmate food service employees.
• Prepares cooks' worksheet, SCDC master menu and maintains records for five years.
• Trains and instructs all employees in all phases of their duties, to include training in sanitation.
• Meets with health, fire, and OSHA Inspectors.

Must successfully complete eight (8) week SCDC Basic Training upon hire.

Minimum And Additional Requirements
State of South Carolina Minimum Requirements:
A high school diploma and supervisory experience in quantity and quality cooking.
SCDC Minimum Requirements: (Or an acceptable equivalency as approved by the Division of State Human Resources).

• Must be certified in hazard analysis and critical control point (HACCP) or SERV safe manager or attain within six (6) months of employment.
• A high school diploma and supervisory experience in quantity and quality cooking.
• Must be certified by the South Carolina department of corrections training academy or must successfully complete SCDC basic training upon hire.
• Must successfully complete the basic supervisory course within eighteen (18) months of employment.
• Two (2) years’ experience in quantity and quality cooking and one (1) year of supervisory experience.

Preferred Qualifications
Two (2) or more years’ experience in a correctional environment is preferred.
