The Assistant Chef will oversee the kitchen and back-of-house staff in the absence of the Chef. They will be responsible for supervising food production; kitchen operations; maintaining safe, clean work areas; and supervising regular part-time kitchen personnel in accordance with the City’s policies and procedures and the Chef’s specifications. The Assistant Chef will strive to provide outstanding service to the guests in a professional and courteous manner, assist the Chef with meal planning, setting up menus, inventory, labor costs, and equipment and supply requirements for the daily operations and special events. They will perform all methods of cookery, recipe knowledge, portion control and garnish all dishes in accordance with standards set forth by the Chef. The Assistant Chef adheres and assists the Chef in implementing hygiene and sanitation policies set by the City and the governing health department and follows safe storage practices. Through teamwork, the Assistant Chef assists other members of the department in achieving the department’s vision and goals.
SUPERVISION RECEIVED:
This position is supervised by the Chef and General Manager.
- Responsible for receiving deliveries and storage of items in a timely manner.
- Assist the Chef with leading, mentoring, and managing culinary team, including hiring and initial and on-going training.
- Assists the Chef with managing food costs and inventory.
- Maintain standards for food storage, rotation, quality, and appearance.
- Identifies issues, places work orders as needed, and requests equipment and material purchases and replacements.
- Creates prep lists for kitchen crew.
- Performs all other duties as assigned.
- Oversee the daily kitchen operations.
- Quality assurance of all products from preparation to table.
- Assists the Chef in the hiring and interviewing process.
- Assists with the development and planning of menus and daily specials.
- Preps and assists in the preparation of all foods: cold and hot.
- Leads by example to ensure professionalism and high morale amongst all kitchen staff.
- Attends all Food and Beverage and managerial meetings.
- Works directly with the Chef and management in planning and coordinating special events.
- Supervises the opening and closing of kitchen and ensures that the procedures are properly performed by kitchen personnel.
- Must be energetic, self-motivated, and a positive team player that takes personal pride in providing superior customer service.
- Assumes complete charge of the kitchen in the absence of the Chef.
- Places orders for food and beverage
- Minimum 2 years of experience in high-volume kitchens.
- Minimum 2 years formal culinary training (Culinary degree preferred).
- High school degree or equivalent.
- Minimum 2 years of prior kitchen management experience required.
- Valid State of Florida Driver’s License with a good driving record
- ServSafe® Manager certification (must obtain within 30 days of hire
Eligibility: Coverage in the City’s group insurance plans begins the first of the month following thirty (30) days of employment.
Health Insurance: Choice of three (3) plans provided through Florida Blue. Employee contributions are required toward the cost of this insurance on a bi-weekly basis as follows
On-Site Employee Health and Wellness Center: Available for use by employees, spouses and dependents enrolled on the City’s Health Plan. No-copays for doctor’s visits, labs, physicals, or prescription drugs dispensed at the Center
Dental Insurance: PPO plan offered through Humana, provided at no cost
Life Insurance: Two (2) times annual salary up to a maximum of $100,000 provided at no cost
Short Term Disability: Non-probationary employees eligible for 60% of salary up to 26 weeks, provided at no cost.
Long Term Disability: 60% of salary up to $5,000 monthly, provided at no cost
Employee Assistance Program: Six (6) visits per calendar year, per issue, provided at no cost.
Wellness Program: Voluntary wellness initiatives that promote and reward health awareness.
Pension Plan: Provided through the Florida Retirement System (FRS). Choice between the Investment Plan with a one (1) year vesting schedule, and the Pension Plan with an eight (8) year vesting schedule. Mandatory 3% pre-tax contribution.
Holidays: Eleven (11) days per calendar year. One (1) Floating Holiday per calendar year.
Personal Leave: Sixteen (16) hours accrued monthly used for vacation, illness, or personal time away from work. Personal Leave is tiered based on years of service and increases overtime.
