Responsibilities
- Conduct Performance Monitoring activities as scheduled.
- Will adhere to the QRMP principles and are committed to delivering to their assigned standard(s) requirements.
- Perform daily GMP audits to ensure compliance.
- Other duties as assigned
- Monitor daily CCP and OPrP Compliance.
- Daily processing and packaging process reviews.
- Enforce procedures- policies- & controls to assure all products are prepared according to USDA standards.
- Assist the cooks with CCPs and analytical verifications.
- Check equipment conditions and calibrate lab instruments- thermometers- etc.
- Daily collection and testing of product samples in process & finished to evaluate quality and food safety.
- Perform daily pre-operational inspections in all rooms/lines.

- An understanding of HACCP and its programs.
- Perform duties with minimum supervision and ability to work with other team members.

- Not required- but preferred ServSafe’s Certificate in Food Handling
- Education in one or more of the following fields Food Science- Quality- Microbiology- Biology- or Chemistry.
- Some experience in food service and/or laboratory work.
