SALT Restaurant & Bar

Seasonally inspired and locally sourced, savor fresh Californian cuisine at SALT for breakfast, lunch, and dinner. A favorite among Marina del Rey restaurants, SALT seeks to inspire guests with an innovative take on modern American cuisine. Located right on the water with 360 degree views, this is a rare opportunity for a creative and collaborative chef to make their mark on the LA dining scene.

Pacifica Hotels is actively searching for a dynamic Executive Chef for SALT Restaurant located at the Marina del Rey Hotel. The Executive Chef will work closely with their team to provide quality food in a timely manner to all restaurant patrons. The Executive Chef will directly be responsible for the efficient and profitable operations of the kitchen and related back of the house areas.

Essential Functions and Responsibilities of the job include but are not limited to:

  • Estimate food requirements and order food from suppliers.
  • Provide assistance to other team members and departments to contribute to the best overall performance of the department, restaurant and hotel.
  • Communicate effectively with guests and fellow team members.
  • Maintain quality of food for both guests and employer: Instruct cooking team members on the fine points of cooking; inspect and taste all foods prepared before serving and adjust flavors and presentation as needed.
  • Maintain a friendly, cheerful and courteous demeanor at all times, while providing personalized service to restaurant and hotel guests.
  • Directly responsible for impacting food cost; maintain food costs in line with budget; accountable for the department P/L.
  • Perform other duties as assigned, requested or deemed necessary by management.
  • Plan menus, costs them out, set up line requirements and staffing. Review work schedules and plan/forecast accordingly with staffing needs and food production.
  • Attend all required meetings and communicate all information daily.
  • Equipment operation and maintenance: Inspect the kitchen and walk-ins for satisfactory cleaning and equipment in need of repair. Maintain sanitation standards through knowledge of health department standards and regulations.

Salary Range: $110k to $120k/year

Required

1 year: Minimum one (1) year experience in a similar position at a hotel or restaurant utilizing skills for food preparation, cooking and presentation.
1 year: Experience in hiring, training, supervision, forecasting, budgeting and cost control in food and labor.
English speaking or bilingual.

Preferred

2 years: Two (2) years of culinary school preferred.
