Job Description
Director of Food & Beverage The Strat (Las Vegas, NV) Description:
Summary: Responsible for the operational direction, administration and coordination of all activities of the food outlets owned and/or operated by the company. Supervise assigned staff in accordance with the departmental table of organization and works with interdepartmental personnel and department management to ensure the operational effectiveness of various outlets involving profitability, hours of operation, cost of operations, performance standards, and guest dining experiences. Ensures standards of food service are met.
Essential Functions
  • Monitors department’s financial reports, including monthly profit and loss statements, and take appropriate actions as necessary
  • Develops and implements operational plans for food venues. Devises strategies to improve service product offerings. Ensures food options and experience are competitive within the market and exceed guest expectations
  • Responsible for ongoing analysis of financial reports to monitor the profitiablity and expenses of food operations. Provides suggestions to reduce cost or increase revenue as appropriate
  • Monitors maintenance and apperance of outlets and provides suggestions for improvement as needed.
  • Works on special projects as assigned by the Vice President of Food & Beverage
  • Responsible for monitoring and controlling labor within the department. Ensures adequate coverage in outlets based on business demands
  • Responsible for hiring, training, supervising, developing, and disciplining department management staff
  • Assists Vice President of Food & Beverage with formulating the annual marketing plan and operating budgets for the operation; development and implementation of action plans to achieve established marketing and budget goals
  • Performs other duties as assigned
  • Conducts inspections of the food service areas to ensure facilities are consistent in the sanitation, safety and aesthetic standards.
  • Works with Purchasing Department on developing product acquisition strategies
Requirements
Qualifications/Requirements:
  • High school diploma or equivalent required
  • 5 years minimum related experience and/or training or equivalent combination of education and experience
  • Minimum 3 years previous experience in food and beverage in an upper level management capacity
  • Bachelor's Degree in Food and Beverage Administration, Business Administration or related area from a college or university preferred
  • Understanding of P&L, budgets, forecasting, scheduling and collective bargaining agreements
  • Experience working with collective bargaining agreements preferred
  • Proven successful experience maintaining appropriate labor costs and increasing revenue
  • Strong written and verbal communications skills
  • Strong analytical abilities required, including the ability to read and interpert financial statements
