Job Description

Basic Job Function:

Leads the efforts of the Food and Beverage operation for the appropriate departments and provides vision, direction and leadership in planning, communicating, administering and financially controlling the overall operations of Tavola and other Cloister outlets. Execute strategic plans for raising the level of service and profitability of the Cloister Food and Beverage operations and development of the new projects within the Cloister. Uphold and assure compliance with all company and departmental policies and procedures.


Use of a Company Vehicle: Not designated to drive a company vehicle


Minimum Requirements:

  • Must have patience and the ability to deal with problems involving several variables in changing situations
  • Exhibits Sea Island Five-Star Behavior standards with guests, members, and co-workers
  • In depth Knowledge of Forbes 5 Star Standards
  • Minimum five (5) years’ experience in a food and beverage leadership role at a comparable 4 or 5 star hotel or resort, restaurant or catering facility
  • Must be detail oriented and able to Manage competing priorities and multiple deadlines in a fast paced environment
  • Experience in a high volume (4+ million annual revenue) upscale restaurant preferred
  • Must possess a positive attitude and have the ability to work with a variety of people and in cooperation with coworkers deficiently and effectively

  • Valid Georgia Driver’s License
  • If applicable, must be flexible to working days, early mornings, evenings, weekends, and holidays
  • Ability to easily adapt to organizational and environmental changes
  • Experience Delivering service standards to various levels of staff
  • Strong wine and beverage background
  • Proficient in Windows XP and Microsoft Office software application such as: Word, Excel, PowerPoint and Outlook
  • Excellent Communication skills, both written and verbal
  • Possess strong food and beverage service training and product knowledge

  • Bachelor’s degree preferred

Tasks/Responsibilities:

  • Interview, hire , train, discipline, and coordinate terminations when necessary for all Cloister food and beverage employees
  • Continually monitors performance in relationship to financial goals
  • Complies with operating and capital budgets and financial plans
  • Report to work at the scheduled time, neatly groomed and in a clean uniform and following company Dress Code policy
  • Contributes to marking efforts for the Cloister with regards to member’s programs and special functions and ensuring all employees are Forbes Compliant
  • Guides, Coaches, Counsels, Develops and Inspires direct reports in a leadership role which promotes teamwork and maximum productivity
  • Supervises any employees, regardless of department, working in dining and beverage service areas, including culinary
  • Directly supervise the Front of House outlet operations and leadership teams of the appropriate departments
  • Maintains working relationships with other departments, promoting communication and cooperation
  • Answer any questions quests may have about Sea Island or the area to the best of one’s ability
  • Works closely with Human Resources Training Department to monitor the Food and Beverage managers with interact programs
  • Reviews and develops pricing policies
  • Plans professional growth and development of subordinates, including the implementation of cross-training
  • Plan program of continuing professional education annually
  • Fiscally responsible for labor controls and food and beverage related expenses
  • Directly supervise outlet leadership for River Bar and Tavola
  • Attends all scheduled employee meetings and brings suggestions for improvement
  • Report all equipment problems and maintenance issues
  • Maintain cleanliness and organization in all work areas
  • Uphold appropriate departmental standards of quality/timing
  • Willing and timely execution of other duties as delegated by leadership

Physical Requirements:

  • Ability to read, write and communicate effectively in English, both written and verbal
  • May be exposed to mechanical, electrical, chemical and fume hazards
  • Maintain compliance with Company Resort Professional Image Policy
  • Ability to kneel, crouch, squat, climb, stand, sit, balance, reach, bend, push, pull and walk for prolonged periods
  • Must have the ability to work for extended time periods in an outdoor environment, including sun, heat, cold, wind, rain, and higher than normal noise levels
  • Ability to lift, carry, pull and push up to 50 lbs repeatedly throughout a shift
