Job Description

The World Equestrian Center-Ocala is currently seeking Food & Beverage Manager to join our team!

The Food & Beverage Manager main focus is day to day operations for Emma’s Patisserie. This position will also oversee the seasonal food and beverage operations for Horse to Water Pool Bar. Responsible for managing the daily operations of multiple dining outlets, while ensuring guests are promptly and courteously served, in accordance with Standard Operating Procedures. Flexibility to learn new operations and work in different environments.

Primary Responsibilities:

  • Enforce sanitary practices for food handling, general cleanliness, and maintenance of kitchen and dining areas
  • To carry out planned training and development in a systematic and professional way to meet the needs of the business and assist in individual team members personal development
  • Flexibility in day-to-day operations with involvement in special functions as needed.
  • To maximize opportunities for departmental sales and profit and other related targets
  • Oversees and supervises daily operations of one or more outlets. Specifically focused on Emma’s Patisserie, a classic French inspired patisserie located in the heart of the Equestrian Hotel.
  • Delegates, oversees, and follows up on bartenders, servers, and runner's duties
  • Ensure compliance with operational standards, company policies, federal/state/local laws, and ordinances
  • To be aware of budgeted and actual departmental targets. This to include sales, covers, and departmental profits
  • Be familiar with resort services, amenities, and outlets
  • Maintains a professional F&B image, including proper uniforms, and appearance standards
  • Available for work assignments outside of associate’s customary work schedule. This may include evenings, overnight, weekends and holidays
  • Have complete knowledge of all policies, standards, and procedures of the departments
  • To be aware of and assist with the control of departmental operating costs to be in line with forecasted business levels
  • Prioritizes, assigns, and trains F&B staff
  • Provide direction to team members regarding operational and procedural issues
  • Assists Restaurant General Managers with shift coverage when needed.
  • Assist with managing uniform inventory and collection.
  • To assist with maintaining and improving departmental operating standards
  • Adherence to all safety rules and regulations
  • To always follow procedures for food and beverage controls
  • Monitors integrity of F&B operation and the service standards established
  • Compliance with all resort policies and procedures and described and communicated by management
  • To assist with leading and motivating the departmental team to promote good team member morale and ensure an elevated level of commitment and pride
  • To be fully aware of and comply with hotel and company rules and regulations as identified in the team member handbook
  • Participates with F&B management team to coordinate, plan, develop and implement long and short-term goals
  • To assist with the control and monitor of payroll costs are in line with forecasted and actual business levels, using payroll management systems
  • To assist with the hiring process of new supervisors and team members.
  • To ensure effective stock rotation and maintain stock levels to include storage and use of equipment
  • Completes accident reports promptly if a guest or team member is injured
  • Ensure a safe working and guest environment to reduce the risk of injury and accidents

Qualifications, Education, Experience, Skills, and Abilities:

  • Strong passion for exceptional leadership, culinary excellence, F&B knowledge, and guest service
  • Proven ability to develop a team
  • A minimum of 2 years, current, management experience in grab and go market, coffee shop, full service restaurant or equivalent experience preferred
  • Knowledge of systems, methods, and processes that contribute to great execution
