Job Description

OVERVIEW

Cultivating a culture of authentic hospitality, the Director of Resort Food & Beverage supports business objectives and growth by overseeing the daily administrative and operational tasks of the resorts entire Food & Beverage program, including all food-and-beverage-related events and activities. This role is responsible for the overall front and back of house planning, direction, evaluation, and control of the Food & Beverage service units, achieving operational and financial goals.

JOB DUTIES

  • Ensures consistent and fair administration of policies.
  • Collaborates with the National Food & Beverage and Marketing teams to create promotional packages, create group menus, and update pricing to reflect current market conditions.
  • Conducts team member performance reviews and recommends compensation adjustments.
  • Manages planning, budget analysis, and reporting for the Food & Beverage program costs across the resort.
  • Ensures all Food & Beverage equipment is in proper working order and satisfies all health and safety requirements.
  • Interacts with guests throughout their dining experience to ensure their needs are properly met.
  • Partners with Team Relations on team member counseling and recommendation of termination when appropriate.
  • Ensures all safety standards are being followed, meals are properly portioned, and waste is minimal.
  • Establishes strong vendor relationships and competitive pricing to ensure proper profit margins and unique selections for Food & Beverage establishments.
  • Other duties as assigned.
  • Confirms accuracy of monthly inventory counts and reconciles inventory with invoices.
  • Promotes and represents Sun Outdoors and the National Food & Beverage program in a positive manner.
  • Coordinates team member selection and development and ensures team members comply with appropriate policies and procedures.
  • Oversees the daily administrative and operational tasks of the resorts Food & Beverage program, including the front and back of house, events, and activities.
  • Addresses guests grievances to improve and increase guest satisfaction.
  • Ensures compliance with preparation and maintenance of required records, reports, and paperwork for the Food & Beverage department.
  • Maintains current knowledge on all state and local health and safety guidelines.
  • Adheres to Suns Timekeeping Policy by reviewing, verifying accuracy, approving and submitting direct report(s) time recorded.
  • Oversees all Food & Beverage production, including menu planning, purchasing, cost control, and inventory for both the front and back of house.
  • Ensures Food & Beverage programs across the resort maintain compliance with Suns quality and financial standards as well as government and Health Department standards.
  • Interacts professionally with a diverse group of team members, suppliers, and customers.

REQUIREMENTS

  • Ability to respond to business needs after normal business hours.
  • Ability to maintain a professional resort image, including cleanliness and appearance standards.
  • Demonstrated ability to manage multiple competing priorities
  • 6 months of experience in P&L management
  • High School Diploma or GED (Required)
  • Excellent written and verbal communication skills
  • Excellent problem solving skills
  • Ability to use Microsoft Office suite (Word, Excel, Outlook)
  • Bachelor's Degree in hotel, restaurant, tourism, or event management (Preferred)
  • Excellent organizational skills
  • 5 years of experience in restaurant/food and beverage service management with increasing responsibilities
  • Flexibility to work events during non-business hours
  • Mentality of a leader with a willingness to learn and grow
