Provides creative advisement to restaurant concepts and programing. Works to implement concepts and programing to ensure a successful implantation of concept. Acts as a liaison between operational chefs and outside consultants to ensure vision and needs are being implemented in all new designs and programs.

The budgeted hourly range for this position is $64.00 - $77.60/hr. Actual pay will be dependent on budget and experience, all our salaried roles are eligible for bonus.

Essential Job Functions
  • Keeps abreast of new food trends, benchmarking as necessary
  • Aligns our products with our company values on sustainability & local sourcing
  • Ensure fair treatment of all employees & engage in mentorship and guidance as assigned.
  • Work with VP regarding samples for production after a thorough evaluation of restaurant fit
  • Coordinates with consultants and third parties on conceptual design and programming.
  • Review of all seasonal menus to include sourcing of local products
  • Responsive to all media enquiries
  • Assists with seasonal culinary audits
  • Works with the planning and development teams to coordinate needs for new concepts and programing.
  • Works closely with senior culinary leadership, restaurant GM’s and VP for development, concept & design of new kitchen capital projects
  • Provides recommendations to senior culinary leadership, restaurant GM’s and VP on product efficiencies to achieve budgeted financial success
  • Develops strong positive supplier relationships
  • Coordinate the direction for training & development of culinary teams with Executive Chef.
  • Assist the Executive chef in managing COS (Cost of Sales) and labor costs as they relate to food product and the culinary labor budget.
  • Responsible for preparing slide decks for presentation, costing, and calendar management
  • Researches local, organic, health, allergy & kids food options
  • Lends divisional support as directed.
  • Works closely with senior culinary leadership, restaurant GM’s and VP providing detailed suggestions on kitchen design & flow to maximize production & efficiencies
  • Other duties as assigned

Qualifications
  • Competent with computer programs such as Microsoft Office, ChefTec/menu costing software
  • Ability to operate (or willingness to learn how) a snowmobile and/or snowcat
  • 5 years of experience in the culinary environment required
  • Culinary degree or equivalent educational level required
  • Ability to ski or ride at an intermediate level is required for employees of ski in/ski out restaurants required
  • Ability to pass a background and Driver License check.
  • Ability to multi task and prioritize
  • Bilingual English/Spanish is preferred
  • ServSafe or similar Food Safety certification

Supervision Given and Received:

Supervision Given: Exercises general supervision over culinary staff. Assigns a variety of routine tasks, sets general expectations of results expected within company’s policies and procedures. Responsibilities include but are not limited to, interviewing, hiring, planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.
Supervision Received: Works under minimal supervision of VP of Mountain Dining. Receives guidance in terms of broad goals and overall objectives and is responsible for establishing the methods to attain them.
