Job Description

Sunseeker Resort Charlotte Harbor is currently searching for a Lead Sushi Cook!

The Sushi Lead Cook is a highly skilled individual which works to prepare sushi dishes in accordance with food health and safety regulations and resort standards. The Sushi Lead Cook’s responsibilities include preparing traditional Japanese sushi rice, chopping, slicing, and filleting various kinds of fish, rolling sushi, sashimi, poke bowls, etc. and placing orders for supplies as needed. This individual should also be able to exceed customers’ expectations and should work clean and organized using only the highest quality ingredients. Ultimately, the Sushi Lead Cook should work well under pressure and maintain resort standards during busy periods.

Sushi Lead Cooks are responsible for maintaining product quality and consistency, preparation levels and execution of menu items in accordance with resort standards. They are responsible for their station preparation and execution, as well as assisting other areas when needed. This role prepares food in an organized, clean, detailed and caring way. The ideal candidate will accomplish their tasks by managing their time appropriately, being a team player, working quickly and accurately, while providing support to the culinary team, ending in a positive guest experience. This position reports directly to departmental Sous Chefs and Chef de Cuisine.

All duties are performed in accordance with department and Sunseeker Resorts policies, practices, and procedures.

Job Duties

  • Assist the team towards achieving exceptional guest service.
  • Sterilizing all utensils, instruments, and equipment used in sushi preparation before every use.
  • Maintains a positive attitude, especially under high pressure.
  • Maintaining a clean work environment in order to prevent food contamination.
  • Create ways to further enrich the guest experience by continuously reviewing, implementing, and refining procedures to ensure every opportunity to offer extraordinary guest experiences while maintaining a culture of smiles, retention of luxury standards
  • Inspecting the quality of fruits, vegetables, and fish used to prepare sushi dishes and informing the Executive Chef when quality is sub-standard.
  • Develop collaborative relationships and synergy with all support departments such as Convention Sales & Services, Facilities, Security, Front Services, Front Office, F&B, Golf Course and Executive Offices
  • Preparing various types of sushi dishes according to established guidelines on quality, portion size, presentation, and food safety.
  • Continue to learn and be on the forefront of new technology for the hotel industry
  • Manage guest requests and own all complaints; resolve issues immediately and follow up to ensure the guest’s satisfaction
  • Stay abreast of property goals to support the culinary division.
  • Exercise discretion and independent judgment when evaluating new programs, new services and new ideas
  • Ability to produce high quality food in an efficient and safe manner.
  • Regularly taking inventory of food supplies and other products.
  • Reporting any problems with kitchen equipment to the manager on duty.
  • Perform other functions as needed
  • Foster a team belief that possesses and delivers on key strategies of guest service, employee relations, team cooperation, financial responsibility and asset management
  • Maintain preparation levels cleanly, proficiently, and safely, to obtain a seamless execution.
  • Proactively seeks feedback and liaise with other departments when opportunities present themselves ensuring a seamless and elevated guest experience
  • Expertly cutting, slicing, and filleting different types of fish.

Minimum Requirements

Combination of Education and Experience will be considered. Sunseeker Resorts performs criminal background checks on all candidates.   • High School Diploma, GED, or equivalent.
  • Previous work experience in a sushi cook position in a restaurant or retail atmosphere.
  • Food handler certification by state recognized agency

Other Minimum Requirements

  • Advanced level knife skills utilized on a daily basis.
  • Knowledge of advanced cooking techniques.
  • Excellent customer service skills
  • Able to execute opening and closing procedures.
  • Must possess mature personal discretion and sound judgment
  • Basic understanding of various cooking methods, ingredients, equipment, and procedures
  • Strong understanding seafood fabrication.
  • Excellent organizational, analytical and project management skills, with particular attention to quality and detail
  • Ability to read a recipe and execute upon it consistently and quickly.
  • Sound knowledge of food safety procedures and guidelines.
  • Ability to work varied shifts, including weekends and holidays
  • Ability to function well under pressure, manage multiple priorities, and meet established deadlines
