Job Description

Reports to: F&B Manager, Assistant F&B Director, F&B Director

Supervises: Bartenders, Servers, Back Servers, Expeditors, Food Runners, Hosts, and banquet staff

Classification: Non-exempt, seasonal

Job Summary

Manage food and beverage service in all outlets and events. Maintain cleanliness. Supervise and develops employees, order supplies, implement controls and manage effectively to ensure that budgeted food, labor, supplies and other cost goals are maintained.

Essential Functions

Leadership

  • Supervises and develops personnel to assure highest productivity and conduct.
  • Promotes a positive restaurant culture.

Service

  • Provides food and beverage service according to clubs standards.
  • Trains, supervises, schedules, and evaluates assigned staff.
  • Maintains cleanliness of production and service areas, equipment, storerooms, and other areas.
  • Receives and resolves complaints applicable to the outlet or event.

Administration

  • Maintains and monitors an inventory of all outlets, in products, supplies, small equipment, and other items.
  • Produces daily or meal-period revenue analysis and other point-of-sale (POS) reports.
  • Provides employee hour, schedule, payroll, tip pool and other reports.
  • Maintains accurate payroll time records and reports.
  • Ensures that required revenue and cost control procedures are consistently used.
  • Processes member billing; completes POS daily closeout.
  • Requisitions supplies from clubs kitchens and storerooms; ensures proper transfer and storage.
  • Consistently complies with the clubs policies and procedures for the service of alcoholic beverages to members and guests.

Safety

  • Inspects outlet facility to ensure that sanitation, safety, energy management, preventive maintenance and other programs are in place in areas of responsibility.
  • Complies with applicable health, alcoholic beverage, fire and other laws and requirements.
  • Knowledge and ability to perform required role during emergency situations.
  • Assists with the production and service of food and beverage products, as necessary.
  • Ability to develop and maintain awareness of occupational hazards and safety precautions; skilled in following safety practices and recognizing hazards.

Other Functions

  • Develops and updates procedures manual for all outlets.
  • Makes product suggestions to staff to increase sales and heighten member satisfaction.
  • Completes other appropriate assignments made by the Food and Beverage Director or Assistant Food and Beverage Director.
  • Suggests menu additions based on member and guest feedback.

Education and/or Experience

  • Extensive knowledge of the private club industrys food and beverage operations
  • High School diploma or GED preferred and one year of related experience and/or training.

Licenses and Special Requirements

  • Alcoholic beverage certification.
  • Food safety certification.

Physical Demands and Work Environment

  • Required to stand for long periods and walk, climb stairs, balance, stoop, kneel, crouch, bend, stretch and twist or reach.
  • Work in hot, humid, and noisy environment.
  • Push, pull or lift to 50 pounds.
  • Continuous repetitive motions.
