Three years experience in institutional or commercial cooking and baking.

Six months experience in proper safety, storage and sanitation standards for food items.

Six months experience in narrative report writing.

Knowledge of prioritizing and organizing food service activities.

Instructs inmates/youth food service workers in food preparation, cooking, safe food and storage handling.

Supervises inmates/youths in their kitchen assignments, directing their activities and establishing a positive working relationship.

Work includes but not limited to, communicating verbally and in writing.

Input and comprehend computer data.

Secure and maintain equipment; read, comprehend and calculate menus.

Observe sanitary food handling practices.

JOB REQUIREMENTS for Correctional Officer/Youth Rehab Food Service Specialist I

Instructs inmates/youth food service workers in food preparation, cooking, safe food and storage handling.

Supervises inmates/youths in their kitchen assignments, directing their activities and establishing a positive working relationship.

Performs other marginal duties as assigned by management.

High school diploma or equivalent certification required.

Demonstrated experience in food service activities, with commercial or institutional meal preparation preferred.

Work experience in a correctional setting preferred.

Supervises detainees specifically assigned to Food Services by monitoring and directing them in food preparation, cleanup and sanitation.

Coordinates and monitors inmate or detainee movements, conducts counts, and provides emergency responses as needed.
