Job Description

Duties

Duties include:
Planning:

  • Assures that each unit produces high-quality, standardized food production, food service, safety and sanitation and equipment management.
  • Contributes to the annual review of equipment and selection for replacement.
  • Reviews and evaluates the entire food production and food service operation and makes recommendations for policies and procedures.
  • Coordinates the work of both units so that meal service is provided within established deadlines.
  • Through Subordinate supervisors, plans and directs work performed in the Food Production unit and Food Service unit.
  • Responsible for the security of food, supplies, equipment, and patient and employee sensitive data in the Food Production and Food Service units.
  • Participates in the initial planning of current and future work schedules, staffing needs, estimates, and recommendations as scheduling projected work.
  • Exercises full supervisory responsibility over work operations involving approximately 5 WS Supervisors (both Cook and Food Service Worker Supervisors), 8 WG Cooks and 40 WG Food Service Workers.

Work Direction:
  • Recommends solutions to staffing problems related to hiring in order to fix staffing issues.
  • Familiar with common institutional food package size and is able to calculate yield/portions of various foods from different packaging.
  • Working knowledge of regular and modified diets and combination diets and is able to identify foods and ingredients appropriate for these diets.
  • Familiar with quality food preparation and short order cooking techniques and ingredients.
  • Assures that recipes, production sheets and established master menus are followed.
  • Checks quality of food to assure standards of flavor, appearance and texture are met consistently.
  • Provides technical guidance to the Food Production and Food Service units to assure smooth and efficient operation.
  • Checks quantity of food produced to control shortages and waste.
  • Recommends solutions to engineering requirements, and work operations directed by other supervisors.
  • Coordinates operations of tray assembly and dining room meal service to assure adequate supplies of prepared foods are available.
  • Oversees the department's equipment repair and preventative maintenance programs and communicates with Engineering Service personnel to coordinate equipment programs.
  • Provides oversight to Food Production and Food Service units throughout meal preparation and service.

Administration:
  • Prepares mid-year and annual performance evaluations for the Cook Supervisors and Food Service Supervisors.
  • Participates in developing, coordinating, and evaluating the department's ongoing training of subordinate supervisors, cooks, and food service workers.
  • Responsible for the receiving, storing and securing of all subsistence and supplies.
  • Certifies time worked and leave charged for all food production and food service unit employees for payroll purposes.
  • Recognizes employees' superior performance and submits recommendations for awards with adequate justification.
  • Develops position descriptions and performance standards for subordinate employees.
  • Reviews and approves performance evaluations and competency assessments given by subordinate supervisors for employees in their work units.
  • Initiates recommendations for the hire, promotion and/or reassignment of subordinate employees.
  • Plans time and attendance schedules and annual leave for all subordinate employees under the food service and food production sections.
  • Serves as alternate ADPAC for the Nutrition and Food Service and primary ADPAC for the Food Production and Food Service units.
  • Ensures proper rotation of subsistence and supplies.

Performs other related duties as assigned.
Working Schedule: Sunday-Saturday, 5:00am-7:30pm hours will vary

SCREEN-OUT ELEMENT: Your qualifications will first be evaluated against the prescribed screen out element, which usually appears as question 1 in the on-line questionnaire. Those applicants who appear to possess at least the minimal acceptable qualification requirement are considered for further rating; those who do not are rated ineligible and are eliminated. The potential eligible are then rated against the remainder of the questions. The screen-out element for this position is;
Ability to Supervise others in the performance of Cook duties.
This is described as experience that includes communicating instructions and providing guidance to staff in the preparation and cooking of regular and therapeutic diets (diabetic, low sodium, low protein, gluten free, etc.), entrees and desserts; observing subordinate employees' work and ability to follow instructions, providing suggestions and guidance as necessary; make recommendations to leadership concerning employee training needs and trends; and establishing deadlines, priorities, and work sequences based on general work schedules, methods, and policies. Experience that includes experience in a variety of cook duties such as preparation of regular and/or special diet foods and meals; cooking meats, poultry, fish, shellfish, and vegetables; making soups, gravies, sauces, desserts, and other foods; knowledge and use of standardized recipes and menus with personal knowledge and experience to measure, assemble, mix ingredients, regulate cooking temperatures, and add seasoning to foods; Experience utilizing computer terminal and inventory management systems, labeling food stock, coding and dating expiration, assisting in food recalls, prioritizing tasks based on food safety and patient needs, checking online food ordering system, handling food under sanitary conditions to prevent cross contamination, and understanding of food/drug interactions and food allergens.
Experience refers to paid and unpaid experience, including volunteer work done through National Service programs (e.g., Peace Corps, AmeriCorps) and other organizations (e.g., professional; philanthropic; religions; spiritual; community; student; social). Volunteer work helps build critical competencies, knowledge, and skills and can provide valuable training and experience that translates directly to paid employment. You will receive credit for all qualifying experience, including volunteer experience.
Note: A full year of work is considered to be 35-40 hours of work per week. Part-time experience will be credited on the basis of time actually spent in appropriate activities. Applicants wishing to receive credit for such experience must indicate clearly the nature of their duties and responsibilities in each position and the number of hours a week spent in such employment.
Physical Effort: The incumbent is subject to continuous standing and walking, and frequent stooping, reaching, pushing and pulling, lifting items such as pans of meat, cases of canned food or sacks of vegetables, and bending. Required to perform heavy work, such as cleaning large-size cooking equipment and utensils; pushing food carts and hand trucks; and loading, unloading and storing subsistence and supply items. Frequently lifts or moves objects weighing up to 40 pounds unassisted, and occasionally lifts or moves objects over 40 pounds with the assistance of lifting devices or other workers. Occasionally works on ladders and uses power cleaning equipment.
Working Conditions: The work requires adherence to defined safety rules to avoid hazards associated with the operation such as the cleaning of gas, steam, and electrically operated equipment and sharp hand tools used in Nutrition and Food Services. The employee must be alert and cautious to avoid injury from wet floors, knives, hot food, equipment, chemicals and meat slicer. The employee must work efficiently to meet meal and established time schedules. The incumbent is subject to changes in temperature from being required to enter4 refrigerators, freezers, going outside in inclement weather and working in kitchen areas where steam and heat are used in cooking and dishwashing, which often causes uncomfortable high temperatures and humidity. The employee is required to wear provided protective clothing and use as outlined in established Safe Operating Procedures. The employee may have hands in water and/or detergents for extended periods of time. The incumbent must be clean and neat at all times and in proper uniform.
