CHEF DE CUISINE
Join our team as Chef de Cuisine and become one of the authors of our story. As part of the Auberge family, you will be responsible for leading the culinary operation in a high-volume, casual, family friendly restaurant overlooking the Pacific Ocean. This role directs and ensures flawless execution of all culinary products, serving the best the island has to offer with vibrancy and style. The ideal candidate will have strong communication and interpersonal skills, and embody professionalism and flexibility. This individual must be a self-starter and enjoy working in a fast-paced, ever changing environment. We are looking for a multi-functional person that has a strong business acumen with attention to detail, forecast accuracy and pace preparation.

KEY RESPONSIBILITIES
  • Use safe food handling procedures and maintain a safe working environment by using proper food handling skills and food safety guidelines.
  • Works through the Sous Chefs to ensure that all food is tastefully prepared as scheduled, portions are controlled per specification, and plates are properly garnished and attractively presented.
  • Check pars for shift use, determine necessary preparation, freezer pull and line set up. Note any out of stock items or possible shortages.
  • Support the Executive Chef in curating unique and appetizing menus.
  • Able to adjust recipes to accommodate guest requests and allergies.

REQUIRED QUALIFICATIONS
  • Able to work on a flexible schedule, including week-ends and holidays, according to department needs.
  • Understanding of basic food cost and payroll cost control.
  • A minimum of 5 years experience in a similar position is required.

PREFERRED QUALIFICATIONS
  • Food Safety Certification.
  • Graduate of professional Culinary program from accredited institution.
