The role of the Food & Beverage Outlet Manager

The Food & Beverage Manager will be responsible for the daily operations of the stewarding department and will assist with In Room Dining, Banquets, pool and operations alike as needed.

Responsible for supervising the day to day operations of the stewarding department. Acts as a liaison between all F&B departments, especially the Kitchen. Assist In room dining, pool and banquets in ensuring all staff are adhering to the appropriate service standards. Assist with completion of guest follow up calls on a timely basis.

Attend BEO meetings and work closely with Catering department to anticipate and coordinate guest needs. Ensure all Back of House areas are maintained to the highest cleanliness standards and cleaning schedules are followed and completed. Enforces proper cleaning routines for service ware, equipment, floors, etc. Ensures compliance with food handling and sanitation standards.

Responsible for setting and stocking all Banquet plate ups that take place in the back of house. Staff and assist with their execution accordingly. Responsible for loading, transporting and restocking food into hot boxes for all banquet events with buffets. Assist Chefs and kitchen staff with various tasks as needed.

Work with all F&B departments to set equipment par stocks and ensure items that are required for service are available when needed. Ensure equipment requisitions are being used as per policies and procedures. Coordinate and execute quarterly inventories. Prepare reports on shortages in glassware, china, silverware and equipment. Purchase replacements as required while following budget guidelines.

Take all necessary actions to reduce the loss of silverware / flatware. Take all necessary actions to reduce breakage of china and glassware.

Supervises employees ability to follow loss prevention policies to prevent accidents and control costs. Ensures all food holding and transport equipment is in working order.
