Sushi Chef Jobs

Major Food Group is hiring a talented Sushi Chef to join our team in our newest project - ZZ's Hudson Yards!

The latest outpost of Major Food Group’s exclusive ZZ’s Club, to open in Hudson Yards, will feature a private edition of Carbone restaurant. Occupying three floors and about 25,000 square feet, it will feature a Japanese restaurant (as in the Miami location), as well as lounges, bars, party spaces and an edition of Carbone.

Responsibilities:

• Standardize production recipes to ensure consistent quality
• Manage day-to-day kitchen operations and culinary team: food execution, quality, technique, and training
• Ensure consistent menu execution by using tools such as line checks, menu change SOPs, and recipes
• Supervise and assist in the preparation of all food in their place, ensuring their section of the kitchen has all necessary work completed prior to the commencement of service.
• Comply with nutrition and sanitation regulations and safety standards
• Manage inventory levels for a wide range of raw fish and other ingredients
• Additional duties as assigned by management
• Assist with R&D for new menu dishes
• Acute attention to detail in the food preparation process, mastering quality control

Requirements:

• This position requires a flexible schedule and weekends are necessary.
• Previous experience in Michelin-starred (1, 2, or 3) and/or NY Times (2 or more stars) is preferred.
• At least 4 years of experience in high volume and fine dining restaurants.
• Have excellent communication and organization skills.
• A Strong knowledge of Japanese Cuisine Experience required
