About the Division of Youth Services: The Division of Youth Services (DYS) provides a continuum of residential and non-residential services that encompass juvenile detention, commitment and parole. DYS is the agency statutorily mandated to provide for the care and supervision of youth committed by the District Court to the custody of the Colorado Department of Human Services. The Division operates ten secure facilities that serve youth between the ages of 10 and 21, who are pre-adjudicated, sentenced, or committed. The Division also contracts with numerous private residential and non-residential service providers throughout the State. For pre-adjudicated youth, the Division is also responsible for the management and oversight of Senate Bill 91-94; a State-funded, locally administered program that provides services to youth at risk of further progressing into the juvenile justice system. In addition to residential programming, the Division administers juvenile parole services throughout the State.

Description of Job


The position performs fully operational food production work in the Division of Youth Services Food Services Department located at Marvin Foote Youth Services Center.


Meal Preparation And Service


  • Enters data onto production worksheets.
  • Garnishes food on the serving line.
  • Properly prepares food that is attractive, appetizing, and of proper temperatures.
  • Follows DYS menus and recipes in order to comply with policies and procedures.
  • When recipes or menu changes are required, documents changes and submits to facility food managerial or supervisory staff.
  • Sets up and tears down serving line as needed.


Safety And Security


  • Anticipates and identifies potential safety and security problems and reports problems to the facility food managerial or supervisory staff.
  • Uses food service equipment properly.
  • Uses and stores chemicals properly.
  • Follows good safety practices and recognizes safety hazards.
  • Inventories knives and/or culinary utensils according to facility procedures to prevent loss.
  • Follows facility key procedures and ensures that doors are kept locked to prevent escapes.
  • Follows DYS policies and facility procedures related to safety and security.


Sanitation


  • Controls times and temperatures of food to prevent food borne illness.
  • Complies with the Colorado Retail Food Establishment Rules and Regulations.
  • Cleans food services equipment and the physical plant of the kitchen on a regular basis, or as assigned.
  • Follows proper sanitation procedures for handling food and cleaning the food service area.


Inventory Control


  • Stores raw food and food supplies utilizing a FIFO inventory method.
  • Inspects food and food service supplies for accurate quantity and condition and rejects food and supplies that are inadequate.
  • Dates all food products upon arrival.
  • Assists in taking a physical count of the inventory at least once a month.
  • In the absence of the facility food manager or supervisory, staff requisitions food and food service supplies.
  • Signs requisitions and submits to the facility food managerial or supervisory staff.


Training And Meetings


  • Attends training to increase job knowledge and comply with DYS policies and procedures.
  • Attends DYS and facility meetings to maintain and increase knowledge regarding procedural changes.


Other Duties As Assigned


  • Performs other duties as assigned.
  • May be required to work any shift, weekends, holidays, and overtime to ensure adequate coverage to feed the clients.
Minimum Qualifications, Substitutions, Conditions of Employment & Appeal Rights

Minimum Qualifications


  • One (1) year of food services experience including, but not limited to: cooking, prepping, serving, hosting, delivering, cashiering, etc.


Substitutions


  • CDPHE recognized food safety certification can substitute for experience.
Employment history is calculated on a full-time basis (40/hrs per week). Part-time employment is calculated on a pro-rated basis to determine qualifications. Be sure your application specifically addresses your qualifications, experience, work products, and accomplishments as they relate to the position and minimum requirements.


Preferred Qualifications


  • Good knowledge of health hazards in food preparation and service, and of necessary precautionary measures. ServSafe certification is ideal;
  • Thorough knowledge of the materials, methods, and equipment used in preparing food on a large scale including the ability to prepare from "scratch" entrees, soups, salads, baked goods, etc.;
  • Ability to work as a team and also independently.
  • Ability to read and follow information presented in writing, including policies, procedures, recipes and menus;
  • Effective Problem-Solving Skills

Highly Desirable Competencies:


  • Ability to clean, cut, cube, grind, and tenderize meat;
  • Ability to understand and execute oral and written instructions;
  • Knowledge of health hazards in food service and the necessary precautionary measures;
  • Knowledge of weights, measures, (e.g., food scales, measuring cups, and spoons) and food measurement techniques;
  • Ability to read English at the level necessary for interpreting and understanding written recipes, menus, nourishment labels, diet slips, portioning sheets, and policies and procedures;
  • Knowledge of meat and vegetable preparation methods;
  • Knowledge of health requirements in the operation of a food service unit;
  • Ability to measure food ingredients using food scales, measuring cups, or spoons;
  • Ability to clean, peel, dice, grate, slice, and chop vegetables;
  • Knowledge of the use of kitchen utensils in serving or portioning meal;
  • Ability to fry food items and operate a grill or tilt grill in a safe and effective manner;
  • Ability to bake food items and operate a gas, rotary, or convection oven in a safe and effective manner;
  • Knowledge of techniques used in mixing food (e.g., gelatin, pancake batter, salad dressing, scrambled eggs, etc.);
  • Knowledge of food safety related to handling and storing cooked foods, serving and storing temperatures, or reading food thermometers;
  • Ability to mix food items (e.g., gelatin, pancake batter, salad dressing, scrambled eggs, etc.);
  • Excellent interpersonal skills.
  • Knowledge of cooking methods (e.g., frying, deep-fat frying, boiling, or baking);
  • Ability to perform basic mathematics (addition, subtraction, multiplication, and division) as related to calculating or converting units of measure for determining proper amounts of food ingredients for mass food production;
  • Ability to boil food items and operate a jacketed steam kettle in a safe and effective manner;

  • Continued employment is contingent upon successful completion of the DYS Pre-service Training Academy, Field Training Program (FTO) and mandatory annual training in all subject areas;
  • On or after October 31, 2021, each facility shall ensure all newly hired employees or support staff members are fully vaccinated at the time of hire or receive their first dose of a two-dose protocol, or a single-dose vaccination, prior to providing any care, treatment, or other services for the facility and/or its clients. Upon hire, new employees will have three (3) business days to provide attestation to their status with proof of vaccination. Vaccinated employees must provide proof of first dose prior to providing care.
  • Must possess a valid driver's license
  • Subject to assigned shifts, may be required to work breakfast, lunch, or dinner shifts
  • Use, handling, or exposure to hazardous materials. Various cleaning agents are used in the kitchen.
  • Must pass a Colorado Bureau of Investigations and Federal Bureau of Investigations background check. Included in the background check is a current and/or previous employer check. Your current and/or previous employers within the past 10 years must be listed on your job application (most recent in descending order), even if the job or duties are unrelated to the position for which you are applying. Incomplete employer information or omission of former employers may result in a disqualification of your application.
  • Note: Fully Vaccinated means two (2) weeks after a second dose in a two-dose series of the COVID-19 vaccine, such as the Pfizer, Moderna or Novavax vaccine, or two (2) weeks after the single-dose vaccine, such as Johnson & Johnson’s Janssen vaccine.
  • Must be at least 21 years old
  • May require floating to other DYS facilities to help with coverage, travel to meetings and training
