Position Description

POSITION DESCRIPTION

Natividad is currently accepting applications for a permanent full time Hospital Director of Food and Nutrition Services position. This incumbent plans, directs, coordinates and supervises Food Services activities and operations including, but not limited to, procurement, receiving, storage, preparation and menu planning for Natividad and performs related work as required.

Examples of Duties

SIGNIFICANT RESPONSIBILITES OF THE POSITION
  • Develops new and reviews existing programs; recommends and directs implementation of changes.
  • Oversee the food safety and nutritional care aspects of the Dietary Department to ensure full compliance with federal, state, and other regulatory agencies.
  • Manages the hiring, training, promotion, evaluation, and discipline of hospital Dietary Department employees; maintains all in service records for employees.
  • Provides technical expertise to other departments.
  • Monitors operating standards, Quality Assurance Performance Improvement, and develops reports for various hospital and medical staff committees.
  • Represents department to outside groups and organizations; participate in outside community and professional groups and committees; and provides technical assistance as necessary.
  • Directs the preparation and administration of the Dietary Department operational and capital budgets; Manage and monitor monthly financials; maintain financial records and reports.
  • Participates in management meetings as required.
  • Negotiates contracts with contractors and consultants, including reviewing proposals and developing contracts.
  • Develops work plans; assign work activities, projects and programs; Oversee managing the daily food production including production planning and controls, developing patient menus, including recipe compliance and food quality, and managing inventory.
  • Develops and implements the Dietary Department goals, objectives, policies and procedures that direct clinical nutrition services, food preparation, distribution and service, purchasing, sanitation, safety practices, performance improvement, and staff education and development.
  • Evaluates staff performance, provides employee counseling and recommends employee discipline; participates in the selection of new employees.
  • Prepares and reviews a variety of complex and comprehensive reports

THE SUCCESSFUL CANDIDATE

A combination of experience, education, and/or training which substantially demonstrates the following knowledge, skills and abilities is required:
Thorough Knowledge of:
  • Dietetics, nutrition and hospital organization
  • Principles and practices of policy development and implementation
  • Menu planning and nutrition analysis
  • Principles and practices of supervision, training and personnel management
  • Principles and procedures of food purchasing, food preparation and maintenance of inventories, refrigeration and serving equipment, supplies and materials used in commercial-size kitchen
  • Principles and practices of budget preparation, fiscal management, cost accounting and control and budgeting in food preparation and service
  • Modern principles and practices of institutional food service management, including planning, purchasing, storage, production and inventory control
  • Local, state, federal, and The Joint Commission standards, rules and regulations regarding food service, and pertinent laws regarding food and nutrition services in a medical facility

Skill and Ability to:
  • Communicate effectively, both orally and in writing
  • Select, supervise, train and evaluate staff
  • Organize, direct and coordinate the activities of a hospital Dietary Department
  • Establish and maintain effective working relations with departmental staff, hospital departments, and others contacted in course of performing assigned duties
  • Properly interpret and make decisions in accordance with appropriate laws, regulations and policies
  • Prepare and monitor food service budget for food, supplies and equipment
  • Prepare clear and concise reports and correspondence and maintain accurate records.
  • Prepare daily and general long-range menu plans for large quantity serving
  • Plan efficient purchasing, ordering, storage and distribution of large quantities of food and supplies
MINIMUM QUALIFICATIONS
  • Possess and maintain a Registered Dietitian License or Certificate for a Hospital Dietary Supervisor pursuant to Section 70275 Dietetic Service Staff of Title 22
AND
  • Possess and maintain a Certification in Food Safety administered by an approved and accredited food safety certification exam pursuant to Assembly Bill 1978

EXAMPLES OF EXPERIENCE/EDUCATION/TRAINING

Any combination of training, education and/or experience which provides the knowledge, skills and abilities and required conditions of employment listed above is qualifying. An example of a way these requirements might be acquired is:
Education
Possession of a Baccalaureate degree for an accredited college or university with a major in nutrition, dietetics, food services management or closely related field, or
Possession of an Associate of Science degree with a major in Dietetic Technology and two additional years of experience as noted below may be substituted for the Baccalaureate degree
Experience
Two years of full-time experience or its equivalent as a Supervisor in the Food Services Division of an acute care hospital or other health care food service environment
