We're excited to have you join The Fort's culinary team! The Fort is a 350 seat fine dining restaurant with a kitchen staff of 15-20. There are many opportunities for promotion from entry level positions. We're looking for dedicated, reliable, hard working cooks with some culinary experience. The Cook's primary responsibility is to cook the prepared food items in the prescribed method. Maintain a clean and safe work area, including handling utensils, equipment and dishes.
Primary Responsibilities Include:

- Attend all meetings.
- Keep every area of the kitchen clean and organized.
- Label and date all products used.
- Maintain the highest level of food quality obtainable.
- Follow all health and safety regulations prescribed.
- Control and limit waste.
- Communicate problems and ideas to management.
- Prepare the cooking areas for the shift.
- Ensure that proper preparation procedures have been completed.
- Maintain a clean and safe kitchen.
- Communicate with coworkers, wait staff and management.
- Follow the proper rotation procedures.
- Provide support for other employees during shift.
- Maintain all kitchen equipment and utensils.
- Account for every food item used.
- Follow all the restaurant regulations prescribed.
- Become aware of what is happening in the dining room (e.g., arrival of a large group).
- Arrive on time and ready to work. Work mostly night shifts with occasional day prep shifts.
- Fill out all forms required.
