Established by chef and founder David Chang in 2004 with the opening of Momofuku Noodle Bar, Momofuku has grown to include restaurants in New York City, Las Vegas, and Los Angeles and Momofuku Goods, a line of home cooking products. Momofuku has gained world-wide recognition for its innovative take on cuisine, while supporting local, sustainable and responsible farmers and food purveyors.


Momofuku Ko and Ko Bar


Momofuku Ko opened in 2008. Ko is guided by the Japanese kaiseki tradition as well as seasonality, the innovation of our mentors and peers, food memories, and the breadth of cuisine available in the melting pot of New York City. Ko has two Michelin stars, which it has maintained since 2009. In 2015, Ko was awarded three stars by the New York Times.


Ko Bar, which opened in 2018, serves an evolving a la carte menu and an expansive beverage program.


The daily responsibilities of the Wine Administrator involve being a leader in all beverage maintenance areas. This individual will provide assistance in maintaining the beverage program, while working closely with the Beverage Manager, Chefs, and FOH Managers on its creative development and standards implementation. The Sommelier will be directly responsible for guest-facing beverage interactions, inventory, staff and personal education developments, and structure and daily upkeep of beverage offerings.


Compensation: $25 per hour

Responsibilities


INVENTORY


  • Timely communication of any ordering needs to the Beverage Manager.
  • Maintains, tracks, and properly documents all staff and management beverage purchases.
  • Timely communication of any menu changes and stock changes to Beverage Manager and relevant staff.
  • Assists in monthly beverage inventory.
  • Closely follows all ordering, sourcing, and costing protocol.
  • Maintains, tracks, and properly documents all BTG and Wine Pairing wastage.
  • Maintains proper glassware inventory and breakage log.
  • Maintains, tracks, and properly documents all corked bottles.
  • Closely follows protocols on new items set up in both POS and inventory management systems.


MAINTENANCE


  • Maintains stock of all beverages according to service needs.
  • Maintains accurate and up-to-date POS.
  • Maintains cellar organization to ensure all bottles can be found at various onsite storage locations.
  • Maintains accuracy of printed and online menus.
  • Maintains timely upload of all beverage info sheets to Google Drive.


PROGRAM & PERSONAL DEVELOPMENT


  • Continuously suggests program refinements to Beverage Manager, Chefs and FOH Managers.
  • Regularly attends on-premise, off-site, and virtual tastings.
  • Keeps up to date with local and international wine developments.
  • Helps develop language for communicating the beverage program's focus to guests.
  • Continuous pursuits of professional beverage education outside of the restaurant; outline self-education program and goals.


SERVICE


  • Adheres to COVID-19 related health and safety standards.
  • Constantly pushes to creatively interpret positive guest relations and industry standards.
  • Contributes to augmenting existing systems.
  • Maintains accuracy of pre-service beverage notes.
  • Has full knowledge of Momofuku and Ko; able to answer FAQs.
  • Adheres to grooming and dress code guidelines.
  • Is committed to constant improvement of teamwork and communication.
  • Has full knowledge of food and beverage menus, including the major components of a dish or drink. This may include ingredient provenance and simple descriptions of unfamiliar ingredients or preparation methods.


STAFF ENGAGEMENT


  • Creates quizzes to maintain beverage knowledge level in the team.
  • Creates frequent beverage education and tasting classes to maintain a high engagement level.
  • Works with Beverage Manager and FOH Managers to create an effective beverage training program for new hires, as well as, continuing education to ensure firm beverage knowledge across the team.
  • Helps develop appropriate educational goals and outreach that may benefit both the restaurant and the company at large.
  • Helps develop language and protocol to enhance guest beverage experience and boost beverage sales.


Required Qualifications


  • Ability to work in an organized and meticulous manner with strong attention to small details
  • Ability to collaborate with Chefs, FOH Managers, and most importantly, the Beverage Manager

  • 2+ years of relative experience

  • Possess strong interest in food, beverages, and the business of hospitality
  • Strong beverage knowledge

  • A proven track record of dependability and a continuous focus on learning and development
  • Ability to train new Wine Admin team members in all aspects and responsibilities of the role


Physical Demands


  • The physical demands for this position are seeing, hearing, speaking, reaching, frequently lifting up to 25 pounds, occasionally lifting up to 50 pounds, sitting, standing, for 4 to 8 hours, bending, and moving intermittently during working hours.
