Fiola Mare is our stylish, coastal Italian restaurant inspired by Fabio Trabocchi’s love for seafood. Our menu features wonderful crudo, seafood towers, and daily selections of whole fish and the most pristine seafood from around the world. Essential Duties and Responsibilities:

• Actively participates in all company training programs and consistently meets training expectations.
• Anticipates and accommodates guest needs throughout service.

• Assists in setting up the dining room.
• Consistently able to properly identify and explain menu items and ingredients based on appearance.
• Maintains dining room and kitchen station par-levels during service.
• Cleans and polishes items needed at the front-of-house.
• Conducts all required Opening, Side-Work, Hand-Over and Closing Duties as outlined by Fabio Trabocchi Restaurants and management.
• Conducts daily dining room and kitchen inspections.
• Ensures foods and beverages served meet Fabio Trabocchi Restaurants quality standards.
• Consistently maintains Grooming Standards.
• Maintains dining room (tables and stations) cleanliness and organization.
• Maintains a high level of food knowledge. Is able to describe guest-orders correctly.
• Clears dirty and used dishes from tables and service stations.
• Restocks condiments as needed.
• Sets up kitchen service stations according to layout standards.
• Reviews, understands and communicates guest-preference data to appropriate persons.
• “Owns” problems when they arise and takes responsibility by finding solutions.
• Maintains work-area and restaurant cleanliness and organization.
• Replaces used dishes and silverware.
• Is always pro-active and identifies potential problems before they arise.
• Maintains cleanliness and organization at all kitchen service stations, including the dish area.
• Performs additional tasks at the direction of management.
• Runs, serves and describes guest-orders as per Fabio Trabocchi Restaurants standards.
• Makes appropriate decisions, which are in the best interest of the guest, the employees and the company.
• Maintains an understanding of the proper steps of service required

Qualifications:

• Previous experience with Italian or Spanish restaurants a plus
• Professional appearance and grooming standards appropriate for a premier fine dining restaurant
• Full and part time positions available
• Excellent guest service skills
• Minimum of 1 years of experience in an upscale casual or fine dining restaurant, exp. with high volume a plus
• Willingness to learn and grow
