Basic PurposeThe dish and general utility position is responsible for maintaining cleanliness and sanitation standards for china, glassware, tableware, cooking utensils, etc., using machine and manual cleaning methods. This position also ensures the dishwashing area is maintained as a clean, safe and sanitary facility.Major Duties & Responsibilities Duties
  • Set up the dish machine and pot area. Check and record temperatures on provided sheet. Report any discrepancies to your supervisor.
  • Change dishwater in dish machine every hour.
  • Other duties as directed.
  • Clean and roll/unroll mats.
  • Conduct general kitchen cleaning as directed.
  • Notify manager any time dish machine wash or rinse cycle falls below safety standard temperatures.
  • Conduct a walk-through of the dish and sink area. Check to verify that all closing/cleaning procedures were completed to proper standards by prior shift.
  • Do not touch dirty dishes before touching clean dishes without washing hands first.
  • Set up or break down dishwashing area.
  • Sort and rinse dirty dishes, glasses, tableware and other cooking utensils and place them in racks to send through dish machine.
  • Wipe up any spills to ensure kitchen floors remain dry.
  • Remove trash and garbage to dumpster.
  • Wash pots, pans and trays by hand.
  • Assemble/disassemble dish machine.
  • Sort and stack clean dishes. Carry clean dishes to cook’s line and other proper storage areas. Rewash soiled dishes before delivering.
  • Sweep up trash around exterior of restaurant and garbage dumpster.
  • Fill/empty soak tubs with cleaning/sanitizing solutions.
  • Sweep/mop floors.
  • Check mop room for cleanliness and, if necessary, clean and organize the entire room.
  • Sweep and mop the main kitchen, walk-in cooler, storerooms and floors in front and back of kitchen.
Minimum QualificationsMust possess customer focus.Ability to communicate proficiently.Must demonstrate thoroughness.Must exhibit good time management.Must be able to work on all Holidays and for pre-planned special events.Typical Physical Demands
  • Able to walk and stand on feet for long periods of time.
  • The employee must frequently lift and/or move objects up to 10 pounds and occasionally lift and/or move objects up to 40 pounds.
  • The employee is occasionally required to sit; climb or balance; and stoop or kneel.
  • Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception and ability to adjust focus.
