Littlerock, WA

The Department of Corrections (DOC) is seeking a highly motivated and qualified individual for the position of Cook, AC (Adult Corrections) at Cedar Creek Corrections Center (CCCC). This recruitment will be used to fill full-time permanent position as well as on-call.

  • This recruitment may also be used to fill future permanent vacancies as they occur.

  • Recruitment will also be used to fill on-call positions.
Facility Profile
CCCC is a 480-bed male facility. The facility is located in the Capital Forest 20 miles south of Tumwater. CCCC is co-located with the Department of Natural Resources and is a minimum-security facility. This facility houses minimum security incarcerated individuals and offers treatment, work, and vocational programs to help ready incarcerated individuals to transition back into the community. CCCC is a sustainability prison; some of the many programs include rehabilitation of ailing Western Pond Turtles, raising bees, training service dogs, gardening, and composting. The site includes two living units, a health clinic, education buildings, a gymnasium and support facilities. All incarcerated individuals work at this facility either on an off-site work crew or within the facility grounds.

Whether the work is inside a prison, in community corrections, or in an administrative office, the Washington State Department of Corrections professional staff experience a high degree of personal satisfaction knowing they are creating environments in which all incarcerated individuals can learn to make choices that contribute to a safer society.

Duties

The Cook, AC (Adult Corrections) directs the preparation and service of food by incarcerated individuals in a correctional facility in support of the Department of Corrections' incarcerated individual food service program including:


  • Maintain and track knife and tool inventory.
  • Maintain and organize food inventories and rotate stock items.
  • Supervise, train, and instruct incarcerated individuals in general food service practices.
  • In accordance with policy, train incarcerated individuals in the preparation and serving of food, hygiene, Hazard Analysis Critical Control Points (HACCP), use and care of equipment, and safety hazards (HAZMAT).
  • Performing mathematical calculations to convert recipes to determine appropriate quantity of food product need for menu and population.
  • Prepare work orders and equipment repair logs.
  • Supervise and train incarcerated individuals in preparing special diets and preparing and setting up trays, carts, and serving lines.
  • Ensuring adherence to portion control protocols.
  • Complete, monitor, and maintain HACCP logs.
  • Monitor incarcerated individuals and intervene when inappropriate behavior is displayed.
  • Follow basic safety practices to preclude hazards and accidents.
  • Supervise, coach, instruct, train, and provide constructive feedback to incarcerated individuals in the safe handling, operation, care, use, and cleaning of kitchen equipment.

Qualifications

Required Qualifications:

A high school diploma or equivalent and the successful completion of a culinary arts program at an accredited community college or vocational technical school.

OR

A high school diploma or equivalent and two (2) years of experience as a cook in a food service establishment.

AND

The ability to:


  • Read, understand, estimate quantities, and follow recipes with minimal waste.
  • Effectively communicate verbally.
  • Role model appropriate behavior to incarcerated individuals.
  • Supervise, coach, train, and provide constructive feedback to incarcerated individuals in general kitchen operational practices.
  • Schedule and organize daily work.
  • Cook a variety of foods.
  • Write clearly, factually, and concisely.
  • Operate and demonstrate the safe handling and operation of kitchen equipment.
  • Follow written and oral instructions.
  • Maintain security, order, and discipline of incarcerated individuals supervised.
Knowledge of:
  • Food service practices, food preparation, and production methods and procedures.
  • Basic arithmetic, e.g., adding, subtracting, multiplying, and dividing.
  • HACCP protocols, practices, and tools for food service.
  • Food service record keeping.
  • A variety of foods.
  • Alternate food preparation methods i.e., cook/chill and cook/freeze.
Understanding of:
  • Weights and measures and differentiate between applications.
  • Rethermalization of food process/procedures.
Special Note: Employees in these positions are required to furnish and maintain a food and beverage service workers permit through the local health department.
