The butcher’s job is focused on processing animal carcasses for custom processing or retail sale. Tasks in this phase may includecuttingandboningcarcasses, converting carcasses intoprimary and secondary cuts,or grinding them down for use in the production of meat products such as salami, hams, bacon and sausages.
Responsibilities
- Breaking down carcasses into primary and secondary cuts
- Displays prices, weighs, packages, and displays meats
- Inspects meats and other related products brought for processing or sales to ensure they are safe for consumption
- Uses butchery tools to custom cut, grind, tie, and prepare meats for customers request
- Cleans the meat preparation counter to avoid contamination of the meats
- Confirms orders from customers
- Displaying cuts at meat counter and selling cuts to public
- Listens to customers and answers their questions related to the services provided to them
- Preparing cuts for weighing, packing and sale or further processing
- Educates customers on their choice of meat to satisfy their meat desires
- Processing meat using knives, cleavers, saws, and other equipment
- Follows up with rules, regulations and other relevant laws guiding livestock production and sales.
- Performing animal slaughtering and butchering
Qualifications
- 1-2 years' experience as a butcher
- Knowledge of meat cutting and techniques
- Manual skills
- Knowledge of food hygiene and safety requirements
- Ability to use knives and other cutting tools
- Precision and physical strength
- Knowledge of animal anatomy
- Customer-oriented approach
