Job Description

Please note that this position is a 12-hour shift (7:00 am – 7:00 pm or 7:00 pm - 7 am) with 2 days on, 2 days off, 3 days on, 2 days off, 2 days on, 3 days off rotation schedule)


Summary:

Responsible for mixing ingredients specific to the recipe and running the dough through dies and into oven processes.

Responsibilities:

Understand and follow all applicable GMP, SOPs, SSPs, and Safety procedures.
Know how to start up and shut down the lines
Recognize the different dough textures and run consistent batches
Correctly measure the minor ingredients for various formulas
Properly use all hand add system and tote systems
Check dough temperature • Fill and clean all ingredient barrels
Clean dies after changeovers
Clean mixers, control panels, all stainless steel, and complete daily/weekly 5S
Check all flour sifters at scheduled times and complete magnet checks
Check all drives, cookers, salters, ovens, dryers, discharge, proofing conveyors, etc.
Document cuts per minute as required •
Check and record caustic every 30 minutes.
Check wet weights/length every 15 minutes and record results once an hour
Check product at end of the oven every 30 minutes • Check transfers while performing product checks
Check cooker temperature every 15 minutes and record once an hour
Check dampers for correct settings • Keep salters full
Keep salter platforms and under salter area clean and swept and covers in place
Catch bad product at the back of the oven
Must be able to do a changeover in the 30-minute allotted time frame

Relationships/Contacts

Communicate with all team members, including bakers, leads, packers, PMOs, QC, PC, maintenance, and supervisors

Minimum knowledge, skills, and abilities required to successfully perform major duties/responsibilities:

Ability to read and comprehend simple instructions and short correspondence and memos
Ability to effectively present information to other employees of the organization
Basic skills: Ability to add, subtract, multiply, and divide into all units of measure, using whole numbers, common fractions, and decimals.
Ability to apply common sense understanding to carry out detailed but involved written or oral instructions.
Ability to deal with problems involving a few concrete variables in standardized situations.
Ability to lift 50 lbs. and pass annual lift test.
