Position Summary:
We are seeking an experienced Lead Prep Cook to join our team. The Lead Prep Cook will be responsible for leading the prep team and ensuring that all food items are prepared according to the recipes and standards set by the Executive Chef. The ideal candidate should be a motivated, hard-working individual with at least 2 years' experience in restaurant, hotel, and private party settings.
Type: Hourly, Full Time
Pay Rate: $19.00- $22.00 plus tips
Duties and Responsibilities:
Responsibilities include, but are not limited to:
- Supervise food stations to ensure the proper quality, temperature, and freshness of all products.
- Create daily food prep lists and oversee the production of food preparation and service.
- Maintain all production pars to ensure adequate inventory levels.
- Communicate daily with the Sous Chefs and CDC regarding product specification.
- Prepare and measure all ingredients and specialty items as directed by the Executive Chef.
- Track ingredient quantities and ensure completion of tasks and prep lists.
- Ensure that all food served meets Company and health quality standards.
- Maintain portion control by adhering to all weights and measures.
- Maintain and use all manuals and guides, including but not limited to menu guides, prep books, inventory, plate presentations, menu items, recipe books, and kitchen SOP bible.
- Monitor food temperatures to ensure appropriate temperatures for ingredients.
- Monitor and use par sheets and maintenance logs for kitchen equipment.
- Clean and sanitize all working surfaces, tools, and equipment.
- Monitor and minimize food waste.
- Other job duties as assigned.
- Remain in compliance with mandatory management trainings, including sexual harassment training and workplace safety training.
- Prepare menus and order supplies as directed by the Executive Chef.
- Qualifications:
- Follow all company procedures.
- High school diploma or equivalent; culinary school diploma or degree preferred.
- Attention to detail, speed, and accuracy in performing job functions.
- Motivated, hard-working, and passionate.
- Skills and Attitudes:
- At least 2 years of experience with extensive knowledge in restaurants, hotels, and private parties.
- Ability to understand and follow written directions.
- Clear thinker, able to remain calm and resolve problems using good judgment.
- Rapid learner of new recipes and procedures.
- Ability to prioritize and organize work tasks.
- Excellent communication skills.
- Comfortable learning new skills.
- Strong mathematical skills and ability to convert recipes from standard to grams.
- Ability to work cohesively as a team with co-workers.
Certificates, Licenses, and Registrations:
- San Diego County Food Handlers Card (must be obtained within 30 days of employment). Serve safe certificate preferred.
- Anti-harassment and nondiscrimination 1-hour class.
Physical Requirements:
- Must be able to sit for up to 6 hours at a time
- Must be able to stand/walk for up to 8 hours at a time
- Ability to work in a stressful, fast-paced environment
- Must be able to lift at least 50 pounds safely and properly
- Must be able to work holidays, nights, and weekend
